RIPE MANGO CURRY RECIPE
It’s the season of King of fruits – Mangoes. So how can we not make mango curry this season? We have a quick and easy ripe mango curry recipe Mangalorean style to save you from the hassle of time-consuming curries. This recipe is not just simple but is extremely delicious too.
Mango Curry Recipe - Mangalorean Style
Ingredients
Mango
- 8 Ripe Curry Mangoes (Preferably Sakri guthli)
For curry:
- 1 tbsp Chilli powder
- 1/4 tsp Turmeric/haldi powder
- 1 tsp Coriander powder
- 1/2 tsp Jeera/cumin powder
- 1/4 tsp Pepper powder
- 1/4 tsp Salt
- 4 tbsp Jaggery
For Seasoning:
- 1 tsp Coconut oil
- 1/4 tsp Mustard seeds
- 1 Red long chilli
- Few Curry leaves
Instructions
- Remove the skin of the mangoes and keep it aside.
- In a vessel, pour 3 cups of water and add the mangoes. Add chilli powder, turmeric powder, coriander powder, jeera powder, pepper powder and salt and boil it well for 15 minutes on a medium flame.
- Stir in between. Add jaggery, boil it on a low flame for another 5 minutes and switch off the gas.
- For seasoning, keep a pan on the fire, add 1 tsp coconut oil and add mustard seeds. Cut red long chilli. Add this along with few curry leaves to the pan. Add this seasoning to the curry.
- Serve hot with rice
