EGG GHEE ROAST RECIPE
Mangalore is famous for the special ghee roast made here. Ghee roast of chicken, squid, egg etc are just so flavoursome that will leave you wanting more. It’s super delicious and is perfect when paired with neerdosa/panpoles. So here’s a delicious egg ghee roast recipe.
Egg Ghee Roast Recipe
Ingredients
- 16 eggs
- 10 Kumti red long chillies (Soak it and remove the seeds)
- 1 tsp Turmeric/haldi powder
- 1 Marble sized Tamarind
- 4 Garlic cloves
- 1 tsp Jeera/cumin seeds
- 1 tbsp Coriander seeds
- 4 Peppercorns
- 1 tsp Sugar (Optional)
- 5 tbsp Ghee
- Salt to taste
Instructions
- Boil the eggs and remove the shell and keep it aside.
- Grind chillies, coriander seeds, jeera seeds, turmeric powder, tamarind, garlic cloves, peppercorns to a fine paste.
- Keep a wok, add 4 tbsp ghee, add the masala and fry well. Add one cup of water and boil on a low flame.
- Add sugar. When the gravy thickens, add salt to taste and 1 tbsp ghee.
- Add the boiled eggs and mix with the masala. Close the lid and boil it for a minute on a slow flame.
- Serve hot with chapatis, rotis or panpoles or as a side dish.
