Egg and Cheese Macaroni

This egg and cheese macaroni dish is so drool-worthy that you will definitely make this dish again. We have a very simple and tasty egg and cheese macaroni recipe by Chef Cheryl Lobo.

Ingredients
  

  • 1 cup Macaroni
  • 2 eggs
  • 1 Onion (Small)
  • 1/2 Capsicum
  • 1 Carrot (Small)
  • 1 Green Chilli (Big)
  • 5 cloves garlic
  • 1/4 + 1/4 + 1/2 tsp Salt
  • 1/4 + 1/2 tsp Pepper powder
  • 1/4 tsp Sugar
  • 3/4 tsp Vinegar
  • 1 tsp Red chilli sauce
  • 1/2 tsp Soy sauce
  • 1 tsp Tomato ketchup
  • 2 Cheese cubes
  • 2 tbsp + 2 tbsp Oil

Instructions
 

  • Boil the macaroni with 2 cups water and ¼ tsp salt. Once boiled, strain the water and pass through cold water. Strain and keep aside.

  • Finely chop the onion, carrot, capsicum, garlic and green chilli.
  • In a bowl, beat the eggs and add ¼ tsp pepper and ¼ tsp salt.

  • Heat 2 tbsp oil in a pan. Add in the beaten egg and fry mixing continuously (scramble). Once fried keep aside.

  • In the same pan, add in 2 tbsp oil. Add in the green chilli and garlic and fry till slightly brown.
  • Add in the chopped vegetables and mix well. Fry for around 30 seconds.

  • Add in ½ tsp salt, ½ tsp pepper powder and ¼ tsp sugar and mix well.
  • Add in ¾ tsp vinegar, ½ tsp soya sauce, 1 tsp red chilli sauce and 1 tsp tomato ketchup and mix well. Fry for around 30 seconds.

  • Add in the fried eggs and macaroni and mix well.

  • Sprinkle grated cheese cubes on top and turn the flame off. Cover the pan with a lid and let the cheese melt.
