Thaikulo and Bikna (Herb with Jackfruit Seed) Recipe by Pearl

Thaikulo and Bikna or Herbs with Jackfruit seeds is a delicacy of the South Canara during rainy season. Thaikulo/ Thojank is a monsoon herb that grows every year in the monsoon season in the region of South Canara.

Ingredients
  

  • 3 Soup cups Tender Thaikulo/ Thojank leaves
  • 2 Red long chillies
  • 1 tsp Urad dal
  • 1 tsp Coriander seeds
  • 1/2 tsp Jeera/cumin seeds
  • 1/4 tsp Methi seeds
  • 1 tbsp Red Boiled rice
  • 1/4 tsp Turmeric powder
  • 8 Garlic cloves
  • 1/2 Marble size tamarind
  • 1/4 tsp Mustard seeds
  • 3 tbsp Jaggery powder
  • 1 tbsp Coconut oil
  • 1 Medium onion
  • 10 tbsp Grated coconut
  • 20 Jackfruit seeds
  • Salt (As per taste)

Instructions
 

  • Clean and wash the leaves.
  • Clean and cut the jackfruit seeds into small pieces.
  • Fry the chillies, coriander seeds, jeera, rice, methi seeds, urad dal on a slow fire. Add turmeric powder and tamarind. Let it cool down.
  • Transfer into the mixer/grinder and grind to a fine paste.
  • Keep a wok, put the leaves and 1/2 cup of water and cook the leaves on a slow fire. Add jackfruit seeds, masala and 1/2 cup ground masala water.
  • Cook till the seeds are tender. Add jaggery and salt to taste.
  • Add grated coconut.
  • Keep a pan and add coconut oil, add mustard seeds, then add garlic cloves and fry till golden brown.
  • Add sliced onion and fry till translucent. Add this seasoning to the thaikulo.
  • Serve as a vegetable.
