Wash and finely chop the vegetables.
Wash and cut the chicken into small pieces. Marinate with ½ tsp salt, ½ tsp pepper powder and ¼ tsp vinegar. Keep aside. In another bowl, beat an egg adding ¼ tsp salt and ¼ tsp pepper powder. Keep aside.
Heat 2 tbsp oil in a wok and fry the egg mixing continuously (scramble) until fried. Remove and keep aside.
In the same wok, add in 2 tbsp oil. Once hot, add in the marinated chicken and fry till cooked and slightly brown. Remove and keep aside.
Again add in 1 tbsp oil into the same wok. Once hot, add in the chopped vegetables and let them cook till the cabbage leaves out water.
Add in 1 tsp salt, ½ tsp pepper powder and ½ tsp sugar and mix well.
Add in 2 tbsp red chilli sauce, ½ tsp vinegar and ¼ tsp soya sauce and mix well.
Add in the fried chicken and egg and mix well. Let it fry for around 30 seconds.
Turn the flame to low and add in the cooked basmati rice and mix gently.
Serve Hot.
